Kirimura Shuzo was established in 1860,
during the Edo period.
This is where the story of sake and people began.
It is also where the fermentation techniques and the historic buildings were inherited from.
Winner of the Gold Prize at the National Seishu (Sake) Competition
Our sake at that time won the Gold Prize at the National Seishu (Sake) Competition
and was highly regarded for its quality.
Both the sake and the brewery were beloved by the locals.
In addition to the buildings, tools used in sake brewing at the time
and other materials that reveal the lifestyle and culture of the people have also been preserved.
The careful upkeep of the buildings is the reason for the present appearance
of the historic 100-year brewery and the main building.
The 100-year brewery and the main building have been reborn with
the help of specialists who work on historic buildings in Kyoto City.
Instead of using metal columns,
they utilized wooden lattice bearing walls made of cypress and other materials to meet modern earthquake resistance standards.
Thank to them, we have succeeded in preserving the original atmosphere
of the buildings without losing any of the charm.
